Assorted Goodies

As can be seen obviously, if possible, my breakfast always involves fish and avocado. Croissant with them, home-made bread with them, cheese with them, all possibilities. I can't stop wondering, how people originally found avocado eatable, and why smoked salmon?

Breakfast Duo

When there is abundant avocado and banana, then duo sandwich happens. For weeks, I have been keeping eating avocados that were bought too many from many trips of the grocery shopping. Bowls and bowls of guacamole, avocado milkshake, avocado pound cake, and so on. Still the speed of consuming is way slow than buying. For this duo, one is banana with peanut butter, the other is guacamole with smoke salmon.

Homemade Panini w/ Brie and Dark Chocolate

Nothing tastes better than melted cheese. I particularly like panini with melt brie and chocolate. When I got brie on sale, that's how I ate the entire thing. It is great for an afternoon snack, and breakfast with a cup of black coffee.

Honey Wheat Bagel w/ Avocado and Smoke Salmon

Have I said that bagels at Wegman's are amazing good? I always get a dozen whenever I go there and freeze them for a week's supply.
My favorite sandwich combination has to be avocado+ smoke salmon+ cheese. In the morning that I don't work, I will make fresh soy milk to enrich the home-made breakfast.
So here I had a comfy and delicious breakfast that gave me energy for the day.

Blueberry Bagel w/ Egg White and Smoke Salmon

Blueberry bagel from Wegman's is one of my favorite bagels (the other is bagels from Tim Horton's). Even freeze them and toast later, they still taste as fresh as made right from the oven. I sandwiched them with smoke salmon and the leftover egg white from baking.

Rye w/ Cheddar and Mayo

Breakfast at home can be simple but satisfying. I toasted two slices of rye bread with cheddar and mayo, stuffed with some Chinese minced vegetable. Very happy to eat it with a cup of coffee. I love weekend.

Croissant with Avocado, Cheddar and Egg

I have a big issue with Costco's butter croissant -- I love them, absolutely! My self discipline is not to buy too much when get a chance, or not to eat it everyday. But I do allow myself to have some once a while. The toast oven is a good helper to reheat the frozen croissant, which is like fresh from the oven. I can eat it plain and be happy for the rest of the day, but croissant sandwich makes it to a upper level. This one in the picture was sandwiched with avocado, vintage cheddar and fried egg. I have been eating it two days in a roll and still am very happy.

Grilled Cheese Stuffed with Avocado

Who doesn't like grilled cheese? I have some very good vintage cheddar cheese got from the whole food. And half of the avocado left. That feels just right to stuff into the sandwich. A cup of good white tea after eating this sets the right tune of the morning :)

Mashed Butternut Squash w/ Boiled Egg and Cheese

It's not always lucky to buy a good butternut squash. Generally winter is the season that all those squash taste sweet and creamy. I happened to have a butternut squash that is kinda bland. So I baked and mashed it. Spread on the toast with hard boiled egg and some sheep cheese. Not the best but eatable.

Beet Soybean Hummus w/ Avocado and Cheese

I am addicted to homemade soybean hummus. This time, roasted beets were added to give the sweetness from nature sugar. I made this sandwich simply for the color combination. The beets don't look so vibrant after being mixed into soybean but shows a lovely hint of pink. With the green from avocado, it's like biting into spring!

Lobster w/ Roasted Pepper Hummus

I was offered some lobster last night (thank you!) but it was too late to eat. With these delicious meat sitting in the fridge, i decided to make myself a lobster lunch sandwich. Luckily, a new batch of soybean hummus was also made last night, with a roasted green bell pepper. So today, I enjoyed this delicious sandwich with some fresh basil leaves from my herb pot.

Avocado w/ Roasted Pepper Hummus


I love avocado but morning is just not a good time to make guacamole. Since I still have my soybean hummus left, to sandwich sliced avocado with hummus sounds a good idea for a quick breakfast. I like the different green color in the sandwich. It fits the spring outside!

Caramelized Onions w/ Hummus and Cheese

After the raw onion sandwich, there was half onion left which I didn't know what to do. Also, I really want to give onion another try to save its reputation. So I caramelized it and toasted with some homemade soybean hummus and swiss cheese. It's way better than eating it raw!

Egg Onion w/ Peanut Butter


Raw onion is too pungent to eat on a weekday morning, though I wanted to try this interesting combination for a while. One Saturday morning I made it. Ur...it wasn't a very pleasant sandwich to me. First the egg and peanut butter didn't go well as it described. Then the onion was awfully strong to me. I can't stop tearing and drinking milk to mellow down the taste. But just my personal opinion. If you dare to try, you might like it though.

Banana w/ Nutella and Peanut Butter


Banana goes well with almost any single sweet spread to make a perfect breakfast sandwich. I am always greedy in the morning wishing to have both nutella and peanut butter. So one slice for each, problem solved!

Banana w/ Black Sesame Paste

I don't like eating banana plain. But it always tastes good when made into breakfast sandwich. This is one of the combinations I like.

Beet Hummus w/ Tuna Sandwich

I have been in a beet bender for awhile. I bought beets and cook them in different ways. I made beet red velvet cake, beet chocolate tea loaf, lime beets, glazed beets, and beet hummus. Last time when the hummus was done, I ate it directly with a spoon. This morning, I spread it on rye bread with tuna salad, a perfect breakfast sandwich. I don't know about others, but I can't say no to the salty and sweet combination :) Almost forgot, the recipe is here.
